Duchess apples: The apples are peeled, washed and strained then bound with eggs and cheese. They are shaped into various shapes, usually rosettes, using a pocket fitted with a fluted nozzle. Placed on a baking sheet, they are browned in a hot oven or in a salamander for a few minutes.
They are served as an accompaniment to meat.
