Bénédictine (à la): The expression “à la Bénédictine” is applied, in classic cuisine, to a garnish composed of cod brandade (or mashed potatoes and cod) generally accompanying fish or poached eggs.
Cod is, by tradition, a Lenten fish, but the “monastic” allusion to the appellation is often no longer justified, many of these preparations being enriched with truffles.
