Taste of wood: locut. Woody aroma brought to the wine by the barrel. There is a wide range of woods depending on the barrel. Oak wood contributes to the taste and bouquet of the wine by giving it certain substances:
- tannins (around 50 mg / l per year for a 225-liter barrel) giving the wine its "woody" character.
- odorants with, for example, a finely woody vanilla scent.
