Sorbic acid: locut. Sorbic acid is naturally present in the fruit of the mountain ash from which it takes its name. In wine, sorbic acid plays a role in stabilizing microorganisms. It is used as an antiseptic and as an antioxidant mainly in soft or mellow whites in order to avoid the risks of secondary refermentation. Its use is prohibited in wines made from organically grown grapes.
