Mollasson: adj. Qualifies a wine that lacks consistency, vivacity (acidity) and character. Conversely, we are talking about a wine that is not soft for a penny to designate a virile wine, well endowed with acidity. A soft wine is therefore a wine that lacks structure, nervousness, without much pep. See soft.
Not to be confused with "molasse" detrital sedimentary formation, including in particular calcareous sandstone....
