Pumping over: nm Pumping over in vinification is an operation which consists of extracting must from the bottom of a tank to pour it onto the top of the marc (solid part of the harvest present in the tank) at the top of the tank using of a pump.
The main purpose of pumping over is to best extract the molecules of interest from the grapes (tannins, aroma precursors, coloring molecules), present mainly in the first layers of cells in the grape skins.
