Pinenc : Pinenc is a black grape variety known as fer, fer noir or fer-servadou (which keeps well in Occitan) or braucol. Iron for the hardness of its wood; pinec, for pineau or béarnais pienc for pine cone, by the shape of its clusters. This Gascon variety, 100% south-west, mainly planted in Gaillac on more than 1000 ha, declines its name according to the regions of its establishment:
- pinenc in Madiran,
- mansois in Marcillac,
- braucol in Gaillac, etc.
It is undoubtedly one of the oldest grape varieties in the region. It belongs to the Carmenets family (a group of grape varieties from which, among other things, Cabernets derive). It is present in Fronton, in the wines of Lavilledieu, Marcillac, Estaing, Entraygues and Fel. It gives them roundness, perfume and finesse. It is also appreciated for its colorful, fleshy and rustic side and its very characteristic aromas of blackcurrant, raspberry and pepper. We also detect violet and liquorice.
