Pils (beer) : The beer pils, also called pilsener, pilsen or pilsner, from the name of the city Plzeň in the Czech Republic (Pilsen in German) (see map below), is a type of lager and limpid, bottom-fermented beer related to the type stock. It title about 5 degrees ofalcohol and has a bitterness medium, depending on the type of hops used.
The pilsener is drunk more fresh than a top-fermented beer, but no ice, generally between 10 and 12 degrees, in order to bring out the aromas.
History of pils: This type of beer was created on October 5, 1842 by Josef Groll, in the "Brewery of the Burghers" (Bürgerlichen Brauhaus), in Pilsen, Bohemia. The new beer met with rapid success, so much so that in 1859, the Brasserie des Bourgeois saw fit to register the German word Pilsner (“from Pilsen”), both brand and label of origin.
The revolutionary brewing method allows the production of a clear and golden beer, at a time when beers are either brown or cloudy due to yeast residue in the bottle or barrel.
The success of the Brasserie des Bourgeois soon became worldwide, but imitations flourished, and everyone put the word pilsner (or pilsner) on their bottle. In 1898, the Brasserie des Bourgeois registered a new German name for its beer: Pilsner Urquell, which means "authentic source of Pilsner". But the style is still copied, so much so that it becomes the most widespread in the world.
Since the 1970s, the sale of pilsners has tended to decline in Europe, in favor of specialized beers with top fermentation and spontaneous fermentation. The brewery that produced Pilsner Urquell, the first pilsner, is still in operation in Pilsen. It took the name of its flagship beer (Plzeňský Prazdroj, in Czech — the German name Pilsner Urquell), and still markets it.
Brewing: The original must density is around 11 to 12,5°P. Fermentation takes place between 5 and 10°C. The beer is then filtered which gives it its clarity.
She is usually pasteurized when she is bottling process.
Brands: Today the term is no longer reserved for Pilsner Urquell alone, and many other brands take advantage of this designation.
