Mutage: nm Mutage is an operation which consists for natural sweet wines (VDN) in artificially stopping (and at the right time) the fermentation by adding neutral wine alcohol. The word mutage comes from the fact that the wine is made mute, whereas it sparkles when it is in fermentation. By stopping the fermentation, we preserve a certain amount of sugar in the wine.
