Density of musts: locut. Measurement of the sugar content of grape must which makes it possible to determine the potential alcoholic degree. It takes 17 grams of sugar to make 1% vol in a white must against 18 grams in a red. It is from this measurement of the density of the must that the decision to enrich the harvest will be taken.
