Sulphite must: locut. A sulphite must is a must to which SO2 or sulfur dioxide has been added, to protect it against oxidation and microbial attacks (yeasts and bacteria). Thus, the sulphiting of the must has the effect of selecting the fermentation medium, of clarifying the must and of delaying the oxidation.
