Index (ripening): The ripening index is an index of benchmark data that allows us to determine the optimal time of harvest. The most commonly used index is the sugar / acidity ratio *. To measure it, we use a refractometer, an instrument which allows to know the weight of the sugar / liter of must, the density of the liquid, the alcoholic degree.
