Leucoanthocyanins: nf pl. Grape skin (skin) contains both coloring pigments (anthocyanins) and phenolic compounds (leucoanthocyanins). Professor Ribéreau-Gayon proved as early as 1959 that grape seeds played a very important role as a source of leucoanthocyanins and consequently of tannins in red wines.
