Ethanol: nm Ethanol (or spirit of wine) is the alcohol of wine (ethyl alcohol). The ethanol concentration of a wine is expressed indirectly by the alcoholic degree.
In a liter of wine there can be between 72 and 120 gr of ethanol. A wine at 12° contains 12% of its volume in alcohol, i.e. 96 gr of pure alcohol per litre.
Alcohol represents 98% of the energy value of wine, ie 600 to 650 Kcal per litre. Ethanol is produced by direct fermentation of sugars
