Hardening: Hardening is a physiological phenomenon belonging to the vegetative cycle of the vine and intervening on the branches at the end of summer.
Once the leaves have fallen, the vine will curl up on itself for the winter rest. The bark becomes ocher red and dries up, thus constituting a protection of the vine shoot. It then transforms the flexible branches into hard shoots by lignification.
