Fining: nm Fining is a method used by the winemaker to clarify his wine and bring it clarity by incorporating a specific product, generally a protein (gelatin, casein, egg white, albumin or fish glue) which by coagulating in the wine, entrains the particles in suspension at the bottom of the barrel or the vat. This protein will flocculate and precipitate with it the molecules responsible for the cloudiness, resulting in clarification of the liquid.
