Thermised: adj. “Thermised” milk is raw milk which has undergone a short and gentle heat treatment, at a temperature of 59°C to 65°C for 15 to 20 seconds. This process partly eliminates certain bacteria liable to cause an infection and to impoverish the lactic flora. Cheeses made with this type of milk are held for 60 days before being marketed.
