Scamorza: Scamorza is a slightly ripened spun cheese from southern Italy produced with pasteurized whole milk. It can be made from cow or buffalo milk.
In the regions of Abruzzo, Campania, Molise and Puglia, it benefits from a designation for traditional Italian agrifood products. The most famous scamorza is that of Campania (region of Naples).
