Sagi: Sagi is rancid and salted pork fat, used in the south of France (Roussillon-Languedoc) and in Catalonia to prepare local specialties such as oulade or suquet.
It is also used in stews, dishes in meat or fish sauce. A nut of sagi is enough to give a little more taste to these dishes. It is sold in bread of approximately 250 grams.
