Provolone: Provolone (Italian: provolone piccante) is an Italian cheese originating in the south of the country, but mainly produced in the northern regions (Piedmont, Lombardy, and Veneto).
In Italy, a distinction is made between mild provolone (provolone dolce) which has matured for at least 4 months, and spicy provolone (provolone piccante) which has matured for at least 16 months.
