Penicillium Roqueforti: locut. Penicillium roqueforti is a fungus added to the curd before pressing and activated by inserting needles into the cheese to allow mold spores to grow into vegetative cells and spread through the cheese.
Example: Roquefort-type cheeses. Stilton cheese incorporates both this fungus and Penicillium Glaucum.
