Matsutake: The matsutake, or pine mushroom (Chinese pinyin: bàoyúgū; literally: “abalone mushroom” or sōngjūn; literally: “pine microbe”, in Japanese: matsutake Latin name: Tricholoma matsutake is a rare, tasty mushroom, sought after for its white, fibrous and fragrant flesh. It is found in the autonomous region of Guangxi in China. It is also very popular in Japan, where it grew abundantly but was often overexploited.
