Livermush (American cuisine): Livermush is a pork deli product from the southern United States of America prepared from pork liver, pork head parts, cornmeal and spices.
It is a regional cuisine common in western North Carolina and typically eaten for breakfast and lunch. It has been suggested that liver porridge derives from scrapple. By law in North Carolina, the product must consist of at least 30% chicken liver.
