Fouchtra: Goat cheese Fouchtra comes from Cantal near Aurillac and comes in the form of a 6 to 8 kg tomme. It is a variety of cheese from Auvergne between Cantal and Saint-Nectaire. Fouchtra has an uncooked pressed cheese that is similar to Saint-Nectaire, but with a ripening and a natural yellowish crust that is similar to Cantal.
