Embuchado (Spanish cuisine): Embuchado is a typical sausage from La Rioja (Spain), made from well-cleaned lamb casings, rolled up like a skein (*), olive oil and salt.
It is a common specialty on Laurel de Logroño Street.
The way to serve it is cut into slices, which are passed on the grill with plenty of salt. It is usually accompanied by red peppers.
