Collybie: “Collybie” is the generic name for many species of lamellar mushrooms, of modest size, sometimes very small, with a soft, putrescible texture. Only the velvet-footed collybie, today called "velvety-footed flammulin" (see below), has a culinary interest for its white hat. Known, cultivated and consumed for a very long time in the Far East, it is, on the other hand, rich in vitamins, phosphorus and potassium.
