Toilet (butcher's shop): The toilet is a membrane veined with fat (omentum or peritoneum), also called a “cap” or “toilet”, surrounding or enclosing the viscera (intestines) of slaughter animals, which is used in butchery and in charcuterie, to wrap certain pieces of meat, terrines and pâtés.
