Gour noir: Gour noir is a farmer's cheese from Limousin made from raw milk which has a characteristic beautiful ash color. Capricious, the Gour Noir requires maturing conditions in a cool cellar. Creamy goat cheese, its taste can be both sweet and full-bodied, as its strength varies in immediate relation to its degree of ripening. It is in Corrèze towards Lapleau that we find the Arnaud family.
