Bitterness: nf Bitterness is one of the flavors perceptible by our sense of taste. In the case of cheeses, it is produced by one or more bacteria which have the particularity of invading milk kept cold before production. Bitter cheeses are often products whose manufacturing milk has waited too long for their transformation.
