Beatilles: In the south-west of France, beatilles are slaughtered from poultry.
Formerly, it was the name given to small meats or delicate dishes (rooster ribs, sweetbreads, sot-l'y-leaves, mushrooms, etc.) with which we garnish the pâtés or which are served separately.
