Léopold Mourier: Léopold Mourier was a French chef (1859–1923).
Son of an innkeeper, Léopold Mourier was an exceptional cook. In 1890, he succeeded Foyot and quickly surpassed him in terms of notoriety, in particular by dedicating the Foyot pigeon to him. In 1886, he was chef at the restaurant Paillard, chaussée d'Antin. In 1887, he managed the kitchen of the Maire restaurant where he created Maire apples and Ernestine apples.
