Philéas Gilbert: Philéas Gilbert is a French chef (La Chapelle-sur-Dreuse, Yonne 1857 - Pont-aux-Dames, Seine-et-Marne, in 1943). After completing his apprenticeship as a pastry cook in Sens and a "tour of France" – during which he had the opportunity to work with Auguste Escoffier, Émile Bernard, Ozanne and Prosper Montagné – he became a talented practitioner, coupled with a theorist and a scholar.
