Bau (Frédéric): Frédéric Bau is a French pastry chef and chocolate maker, born April 1, 1965 in Woippy (Moselle department).
Creative Director of the Valrhona chocolatier, he is also known as the creator of Dulcey blond chocolate and the founder of L'École du Grand Chocolat Valrhona. In 2017, he was one of the juries for the first season of the Best Pastry Chef: The Professionals.
