Zola (Émile): Émile Zola is a French novelist (Paris 1840 - idem. 1902). From his paternal Italian ancestry and his childhood in Aix, Zola kept a taste for Mediterranean, Provençal or Piedmontese preparations. Auguste Escoffier (1846-1935), whom he met in London, reports that he had “a real cult for stuffed cabbage à la mode de Grasse”, a stuffed cabbage richly garnished with chard, peas, Parmesan and bacon.
