Popelini: Popelini is an Italian cook of Queen Catherine de Medici (1519-1589) and is known as the inventor of choux pastry.
Biography: Popelini leaves his native Italy to join Catherine de Medici at the Court of France. In 1540, Popelini improved a recipe from the previous cook of Queen Catherine de Medici, Pantanelli (or Penterelli), and created choux pastry under the name of popelin (or puppet).
