Lacam (Pierre): Pierre Lacam is a French pastry chef and historian of the culinary arts (Saint-Amand-de-Belvès in Dordogne, 1836 - Paris, 1902). He created many petits-fours and cakes, including Italian meringue desserts and the recipe for ba-ta-clan cake.
