Chauvet (Jules): Jules Chauvet (1907-1989) was a French wine merchant-grower, winemaker and taster, based in La Chapelle-de-Guinchay in the Beaujolais region.
In addition to his qualities as a winegrower and taster, he had skills as a chemist, acquired at the Lyon chemistry school and then from Otto Warburg, with whom he maintained a long correspondence. He worked in particular on yeasts, malolactic fermentation and carbonic maceration.
