Gottschalk (Alfred): Alfred Gottschalk is a doctor and scholar of Swiss origin (Geneva, Switzerland 1873 - Paris, France 1954). Founder of the medical gastronomy review Grandgousier (1934-1948) (*), he also published, in 1948, a History of Food and Gastronomy in two volumes. He collaborated with Prosper Montagné on the first edition of Larousse gastronomique, published in 1938.
