Duval (Pierre-Louis): Pierre-Louis Duval is a French butcher (Montlhéry, Essonne 1811 - Paris 1870). Former supplier of the Tuileries kitchens, owner of several butcheries in Paris, he had the idea of creating, in 1860, small restaurants with a single dish (boiled beef and its consomme) and at a fixed price.
