Cordon-Bleu: The Cordon-Bleu is a large blue ribbon which served as an insignia for the order of the Knights of the Holy Spirit, instituted by Henri III (*) in 1578. The expression was then applied to a man endowed with high qualities, then to an outstanding cooker. The analogy undoubtedly arose from the connection between the knights' saltire ribbon and the ribbons of the cook's blue apron.
