Champeaux: Le Champeaux is a restaurant founded in 1800, place de la Bourse in Paris (1st arrondissement), by a Mr. Champeaux, and particularly appreciated for its hearty dishes and quick service by scholarship holders and businessmen. The Champeaux chicken was one of the specialties: the chicken, cut into pieces, was sautéed in butter, then baked, deglazed with a white chicken stock and garnished with baby onions and potatoes.
