Chevet moved into a boutique in the Palais-Royal and founded a catering dynasty, famous under the Empire.
Frequented by Grimod de La Reynière, Balzac, Rossini and Brillat-Savarin, his store, which supplied venison, foie gras and fish, pâtés and shellfish, gained international renown and was kept in business by his descendants.
