Pinot Gris

Pinot gris : Le pinot gris ou pinot beurot est un cépage blanc. C'est la  forme grise du pinot noir dont il ne s’en distingue que par la couleur de ses grains. D’ailleurs l’épithète beurot ou beurrot qui le désigne en Bourgogne se rapporte à la teinte grise de ses baies (d’ailleurs plutôt petites), gris rosé ou même brune renvoyant à  la bure que portait les moines cisterciens. En Bourgogne, bien que rare, il fait partie de l’encépagement recommandé de la plupart des appellations (voir plus bas)...
